This week’s meal plan includes: Slow cooker tortellini soup, tandoori chicken and veggies, turkey sausage pasta, Parmesan crusted chicken, crispy chicken Caesar wraps, mix and match sides, flatbread pizza for lunch, and pumpkin bread for dessert, because it is finally fall!
To simplify your grocery shopping list:
- Make extra parmesan chicken or use leftovers, and leftovers from Caesar salad, to make Caesar salad wraps.
- Use leftover naan from tandoori chicken night to make naan pizzas for a light dinner, lunch, or snack.
- Use your favorite veggies in the tortellini soup, turkey sausage pasta, with the tandoori chicken, and even on the naan pizza.
- Lemons used in the tandoori chicken, the lemon rice, and in the Caesar salad dressing.
- Parmesan used in turkey sausage pasta, Parmesan chicken, Caesar salad, Caesar salad wraps, tortellini soup, and buttered noodles.

Meal Prep & Leftover Tips

Turkey Sausage Pasta: Making lower-fat ground turkey taste like savory pork sausage is as simple as adding a few signature herbs and spices. Stay away from the ultra-lean turkey—it has zero flavor and has a squeaky bite when cooked. This dish reheats well so leftovers make a great lunch!

Tandoori Chicken & Vegetables: Use your favorite veggies or whatever you have on hand. This recipe works well with carrots, cauliflower, onion, bell pepper, zucchini, squashe like butternut or acorn, and Brussels sprouts. Serve with naan and lemon rice.

Parmesan Crusted Chicken: The thinly cut chicken breasts that cook fast but stay juicy when baked on a sheet pan. Serve over buttered noodles with a Caesar side salad, or make a chicken Caesar dinner salad and forgo the noodles.

Crispy Chicken Caesar Wrap: Use leftover Parmesan chicken and Caesar salad fixin’s to make these wraps.

Slow Cooker Tortellini Soup: Serve this sausage tortellini soup with crusty sourdough bread or soft dinner rolls to soak up all the delicious broth!

Pumpkin Bread: Customize your pumpkin bread with with your favorite add-ins. Chocolate chips, nuts like pecans, walnuts, or pepitas, sweetened coconut flakes, raisins or dried apricots!

Caesar Salad: This salad is great for meal prep, just make the dressing and croutons ahead of time.

Naan Pizza (Leftovers Lunch): If you have leftover naan from tandoori chicken night, make naan pizzas for lunch or a light weekend dinner or snack.
