Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: chicken Parmesan meatballs and an arugula apple salad, tamale pie with homemade salsa, creamy sausage and bean soup, buttermilk fried chicken with funeral potatoes and creamed spinach, Thai red chicken curry, and pumpkin chocolate chip cookies.
To simplify your grocery shopping list:
- Swap the ground chicken in the meatballs for ground turkey.
- Use whatever meat, beans, and veggies you like or have on hand for the tamale pie.
- Kielbasa sausage for the soup can be found made with pork or made healthier with turkey.
- Use a different type of bean for the soup, such as Great Northern beans, navy beans, pinto beans, or regular kidney beans.
- I broke down a whole chicken into 8 pieces (legs, thighs, breasts, wings) for the fried chicken. Your grocery store butcher might be able to do this for you, or you can buy your favorite cuts of chicken for frying and just use those.
- Feel free to mix and match the veggies to use up whatever’s in your produce drawer for the curry.
- Mini chocolate chips spread more evenly through the cookies, but regular size give a more chocolatey bite.
- For the funeral potatoes, I use the country-style diced hash brown potatoes because that’s what my Grandma used, but you can use shredded hash browns as well.
- Use fresh spinach for the creamed spinach. I’ve tested using both fresh and frozen, and the batch made with fresh spinach was the clear winner.

Meal Prep & Leftover Tips

Chicken Parmesan Meatballs: While the meatballs bake, prep some garlic bread, toss together a leafy green salad, and dinner is served!

Tamale Pie: You’re welcome to make your own enchilada sauce and cornbread mix if you’ve got the time to do so, but tamale pie is one of those fast and easy dishes that tastes pretty much the same whether it’s all homemade or not.

Creamy Sausage and Bean Soup: Remember to rinse and drain those beans before you dump them in. This will prevent your soup from tasting metallic.

Buttermilk Fried Chicken: For super crispy fried chicken, marinate it first in a buttermilk mixture and then dredge in seasoned flour. I like to use self-raising flour (which has leavening agents added to it) for a light, crisp crust.

Thai Red Chicken Curry: Thinly slice the chicken for maximum juiciness. If you’ve ordered red chicken curry at a Thai restaurant before, you’ve likely noticed how wafer thin they shave their chicken.

Pumpkin Chocolate Chip Cookies: I’ve noticed the longer the scooped raw cookie dough sits before baking, the cracked the tops of the baked cookie become. With less time sitting around, the more rounded the cookie tops will be.

Funeral Potatoes: If you’d rather skip the Corn Flakes, you certainly can. My mom’s friend Sheryl makes them without and instead adds another thick layer of cheese and calls them Heavenly Potatoes.
