My husband and I were watching one of our taped episodes of , and he got all up and at ’em about this smashed and broiled zucchini he promptly declared the centerpiece of that night’s dinner. Well, okay then, let’s go! We paired it with our fave grilled pork chops, which were absolutely dripping with juiciness, zucchini rice (recipe coming soon), and a quick tomato and peach caprese salad. Like I said, I love summer.
