This Easter, I don’t have anyone to hide baskets for, but I did bang out some mini-versions of my favorite carrot cake to celebrate the holiday. I made the same recipe as my carrot cake, scooped the batter into cupcake liners, and baked at 350°F for 18-22 minutes. Same frosting too, just made into thick and rich swirls. And that is how you seal the Easter deal!
