This week’s meal plan includes: Potato chip crusted chicken, chicken fajitas, slow cooker lasagna soup, Greek chicken kebabs, bolognese sauce, sides, and peach blackberry cobbler.
To simplify your grocery shopping list:
- Bell peppers used in kebabs, fajitas, and can be added to lasagna soup. Zucchini is used in the lasagna soup and kebabs.
- Tomato paste used in lasagna soup and bolognese sauce.
- Boneless, skinless chicken breasts used for potato chip crusted chicken, fajitas, and kebabs.

Meal Prep & Leftover Tips

Potato Chip Crusted Chicken: Choose any one of the many flavors of Kettle Brand potato chips! Leftover chicken is amazing served over a salad for lunch. To revive the crispiness, reheat on the convection setting or in a lightly oiled skillet over medium heat.

Chicken Fajitas: This meal is perfect for meal prep and can be refrigerated up to 2 days before cooking. Mix the spice mix and marinade, prep the chicken and veggies, then mix with the marinade in separate freezer bags or containers.

Slow Cooker Lasagna Soup: Slow cooking makes lasagna soup easy to make any night of the week, and it can be made with the slow cooker function on the Instant Pot. Keep this soup vegetarian or add cooked sausage, ground beef, or ground turkey.

Grilled Greek Chicken Kebabs: These kebabs can be marinated, threaded on skewers, and refrigerated the day before grilling. If you have leftovers, wrap them in pita with some hummus or tzatziki for a quick lunch.

Bolognese Sauce: This sauce is best after a long, slow simmer for the flavors to develop, so plan on at least 3 hours of cooking time, or even longer. Makes enough for dinner tonight and leftovers tomorrow. If you don’t have time, make Quick and Authentic Pasta Pomodoro Sauce.
