Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: cashew chicken, smoky pulled pork tacos, BBQ chopped chicken salad, marinated flank steak, potato chip crusted chicken, coconut banana bread muffins, and mix and match sides.
To simplify your grocery shopping list:
- Use your favorite veggies across your meals this week. Bell peppers, corn, squash, mushrooms, broccoli, and onions work in the cashew chicken, BBQ chicken salad, BLT corn salad, and grilled veggie skewers.
- Add any favorite veggies like broccoli, green bell pepper, water chestnuts, snow peas, or snap peas to the cashew chicken.
- Feel free to use store-bought salsa for the pork tacos, just be sure to choose a high-quality salsa that’s slightly smoky in flavor.
- If you can’t find a bone-in pork butt (pork shoulder), boneless will also work.
- You can use frozen or fresh corn for the Mexican corn dip and BLT corn salad.
- We are using corn in the corn dip, BBQ chicken salad, BLT corn salad, and grill some up with your veggie skewers!
- Use your favorite veggies in the BBQ chicken salad and toss in some onions, bell pepper, mushrooms, carrots, radishes, and avocado.
- Use whatever beans you have on hand or prefer in the salad. Cannellini, black, pinto, navy, even garbanzo.
- If flank steak is too pricey, consider trying similar but not as lean cuts such as skirt steak or sirloin tip.
- Choose any one of the many flavors of Kettle Brand potato chips for the crusted chicken to serve to the variety of taste buds in your house.

Meal Prep & Leftover Tips

Cashew Chicken: Chicken thighs are best for Cashew Chicken because they stay juicy and tender. If you prefer chicken breast, be careful not to overcook or your chicken could be dry.

Slow Cooker Smoky Pulled Pork Tacos: This recipe makes a lot of pork that freezes beautifully. Portion and freeze for future use in tacos, burritos, enchiladas, on nachos, and in salads and taco bowls!

BBQ Chicken Chopped Salad: On Sundays in the summertime I grill up a gaggle of boneless chicken breasts to eat throughout the week. But you can also prepare the chicken on the stove-top or in an instant pot!

Marinated Flank Steak: The meat can be sufficiently marinaded in 30-45 minutes at room temperature, but if you want your steak to absorb a deeper Asian flavor tang, meal-prep your meat the night before and let it sit in the refrigerator overnight.

Potato Chip Crusted Chicken: Leftover chicken is amazing served over a salad for lunch. To revive the crispiness, reheat on the convection setting or in a lightly oiled skillet over medium heat.

Coconut Pecan Banana Bread Muffins: These banana muffins are terrific for freezing. Allow them to cool to room temp before sealing them inside a freezer bag. To reheat, either set them on your counter to thaw or gently reheat them in the microwave.

Cilantro Lime Rice: Basmati, jasmine, or Carolina long grain rice are all good options. For the fluffiest rice, be sure to rinse the rice before cooking.

BLT Corn Salad: Make slicing the bacon a little easier by freezing the bacon strips for 10 minutes before cutting into chunks.
