This week’s meal plan includes: Sweet and sour pork, Southwest stuffed peppers, creamy chicken and rice, pepper steak, penne pasta with marinara, chocolate zucchini bread and mix and match sides.
To simplify your grocery shopping list:
- Long grain rice used for stuffed bell peppers, creamy chicken and rice, and served with sweet and sour pork and/or pepper steak.
- Bell peppers used for sweet and sour pork, stuffed peppers, and pepper steak.
- Cheese used for stuffed peppers and creamy chicken and rice.

Meal Prep & Leftover Tips

Healthier Sweet and Sour Pork: If using canned pineapple make sure to use pineapple packed in juice not syrup. To prep ahead: cut veggies and pork in advance, and the sauce will last up to 2 weeks in the fridge.

Southwestern Stuffed Bell Peppers: You can prep stuffed peppers in advance by blanching and filling them, then refrigerating for up to 2 days. Stuffed bell peppers freeze and reheat well.

Creamy Chicken and Rice: This easy casserole is done in one pot on the stove top and is ready in 30 minutes or less. To cut down on prep-time, use rotisserie chicken. Ground chicken, canned chicken, or even tuna can also be used.

Pepper Steak: As with the sweet and sour pork, you can prep your veggies and meat ahead of time.

Penne Pasta with Easy Marinara: After a busy week, this easy marinara turns out light and bright and is supremely easy to make from scratch with just 5 ingredients. Enjoy it as a vegetarian meal, or top with leftover pepper steak.
