Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: Buffalo chicken sandwiches with loaded baked potato salad and a tequila sunrise cocktail for Memorial Day. The rest of the week we are having tamale pie with a chopped Mexican kale salad, chili crisp carbonara, and flank steak paired with a summer fruit salad, and chili crisp salmon with sesame soba noodles and Asian broccolini!
To simplify your grocery shopping list:
- Make your own homemade coleslaw or feel free to buy it pre-made. If you want to make your own, I always start with a bagged coleslaw mix and make my own dressing.
- The tamale pie is one of those clean-out-the-fridge meals that can be tweaked to use up whatever blend of meat, veg, and cheese you have on hand.
- If you want to make the carbonara vegetarian, sub the pork for 8-10 brown mushrooms, sliced and cooked in 2 tablespoons olive oil.
- We are using chili crisp in the carbonara and salmon.
- For the cocktail purchase tequila, such as blanco tequila, reposado tequila, or Patron Reposado. And you can swap out the orange juice for grapefruit juice.
- I buy whole heads of butter lettuce for my summer salad, trim, rinse, and pop in my salad spinner, but you can find bagged butter lettuce as well.
- These days, soba noodles are easier to find, you can typically find them at your local grocery store in the Asian section.
- Broccolini is a Japanese hybrid of broccoli and Chinese broccoli, and a superfood that can easily be interchanged with regular broccoli.

Meal Prep & Leftover Tips

Buffalo Chicken Sandwich: For quicker, more even cooking, I always cut my chicken breasts in half lengthwise to create thinner fillets. For maximum crispiness, let the chicken rest for 20 minutes after breading which allows the crumbs to adhere.

Tamale Pie: You’re welcome to make your own enchilada sauce and cornbread mix if you’ve got the time to do so, but tamale pie is one of those fast and easy dishes that tastes pretty much the same whether it’s all homemade or not.

Chili Crisp Carbonara: Because there’s no dairy in this recipe to separate when chilled in the fridge, any leftovers are absolutely divine warmed up in the microwave, then enjoyed topped with a fried egg.

Flank Steak with Mustard Sauce: Always let your steak rest before serving. I transfer mine to a clean cutting board to prevent it from overcooking in the hot pan, then tent it loosely with foil to trap the heat. A brief rest gives the juices within the steak time to redistribute.

Chili Crisp Salmon: If you’re one who likes extra saucy bites, double the marinade recipe and save the extra for serving with the cooked salmon.

Loaded Baked Potato Salad: Baking the russet potatoes for this recipe creates a lighter, fluffier consistency than boiled, and a lightened potato base to easily absorb the creamy mayo and sour cream.

Summer Fruit Salad: Ripen your peaches on the counter if they haven’t yet hit their peak. A day or two sitting on the counter will do wonders for bringing them to their ultimate juiciness.

Sesame Soba Noodles: Unlike traditional pasta noodles, soba noodles DO need a rinse or two in cold water. This removes the gluten and starches released while cooking and prevents the noodles from turning into mush.

Asian Broccolini: One of the worst things you can do to broccolini or broccoli is to overcook it where it turns to mush. Instead, steam the broccolini until just this side of tender. Add the savory flavors to steep and infuse into the broccolini as it continues cooking.
