Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: creamy lemon chicken breasts with mushrooms served with rice and roasted asparagus, baked sausage rigatoni, yakisoba, the best garlic burgers with loaded baked potato salad, chicken pot pie, and double chocolate chip cookie ice cream sandwiches for dessert.
To simplify your grocery shopping list:
- Ground turkey, hamburger, or plain sausage can be used in place of the Italian sausage in the rigatoni.
- Yakisoba is most commonly made with cabbage, carrots, onions, and bean sprouts, but you’re welcome to use any stir-fry veggies you have on hand pr prefer.
- Fresh yakisoba noodles are often stocked in the refrigerated section of larger grocery stores as well as most Asian grocery stores, but can be substituted with ramen or udon noodles.
- Instead of burger buns, the garlic burgers require french bread. That gooey, soft, white bread you get at the check out stand of your grocery store.
- For some shortcuts to save time making the pot pie, you can use a good quality store-bought crust or even puff pastry, a store-bought rotisserie chicken, and/or cook and chop your chicken ahead of time, even a few days before.
- I use natural sour cream in the potato salad, but if you’re looking to cut calories, substitute non-fat Greek yogurt for that added tang.

Meal Prep & Leftover Tips

Lemon Chicken Breasts and Mushrooms: Substitute the vermouth with chicken broth instead of wine. Or, try a sweetened, fortified wine like marsala or madeira. White wine works too, but the flavor won’t be as complex. Serve with white rice and roasted asparagus.

Baked Sausage Rigatoni: The key to baked pasta is to undercook it when boiling it in the pasta water so it doesn’t get mushy as it bakes in the sauce.

Yakisoba: Fresh ginger goes bad pretty quickly, but you can finely mince or grate it in bulk and freeze in ice cube trays to use later. Add the frozen cube of ginger straight to the pan; such a small amount will defrost very quickly.

The Best Garlic Burgers: Thinner patties make better garlic burgers. The patties are simply seasoned with garlic powder, kosher salt and pepper. But because they’re thinner, the seasonings are more pronounced because there isn’t as much area or meatiness to infuse the flavor.

Chicken Pot Pie: Have your double-crust pie dough ready to rock and roll. To simplify the pot pie-making process, make sure your dough is made and chilled for at least 30 minutes ahead of time (or make it the day before).

Chocolate Cookie Ice Cream Sandwiches: I bought the small cartons of prepackaged ice cream and with a sharp knife cut straight through the packaging to create round discs to sandwich in between my cookies.

Loaded Baked Potato Salad: Baking the russet potatoes for this recipe creates a lighter, fluffier consistency than boiled, and a lightened potato base to easily absorb the creamy mayo and sour cream.
