Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: Thai coconut curry meatballs, cilantro lime chicken, green chicken enchiladas, coconut curry shrimp, taco soup, sides, and rice pudding.
To simplify your grocery shopping list:
- Cilantro used in meatballs, grilled chicken, fajitas, shrimp curry, and rice.
- Grill up extra cilantro lime chicken to use in the enchiladas.
- Serve enchiladas with pinto beans, and use leftover beans in taco soup, and on taco salad.
- Curry paste, coconut milk, and ginger used in meatballs and shrimp.
- Bell peppers, limes, onions, garlic, and avocado used throughout many of the recipes.
- Jasmin rice for cilantro lime rice and rice pudding.

Meal Prep & Leftover Tips

Thai Meatballs: Prep and bake the meatballs in advance, or make the sauce while they’re cooking. Use a small cookie scoop to measure out uniform meatballs!

Cilantro Lime Chicken: Grill or marinate extra chicken to use for green enchiladas! Serve chicken with sides or over a Taco Salad.

Green Chicken Enchiladas: Enchiladas are a fantastic freezer meal to have on hand. Assemble the enchiladas, then cover tightly with plastic wrap and foil before freezing.

Coconut Curry Shrimp: Just like chili, this creamy coconut shrimp curry tastes even better the next day after the flavors have had time to come together. Perfect for leftovers or lunch!

Taco Soup: Use turkey or chicken instead of beef for a lighter soup. Or omit meat all together for a vegetarian version. Can be made on the stove or in a slow cooker or Instant Pot.

Taco Salad: If you have extra chicken, pinto beans, and even rice, throw together an easy taco salad for a light lunch or quick weekend dinner.
