This simple turkey stuffing recipe is studded with dried cranberries, walnuts, celery, and onions, and scented with a mix of fresh herbs, for an easy and comforting addition to your Thanksgiving table.
Preheat oven to 350°F. Coat a 9x13-inch baking pan with 1 tablespoon butter and set aside.
Prep the dry ingredients. Place bread cubes, walnuts and cranberries in large bowl and set aside.
Sauté the aromatics. Melt remaining butter in skillet over medium-high heat and add celery and onions. Cook 4-5 minutes, or until softened and lightly browned, stirring frequently. Add parsley, ground sage, thyme, kosher salt and pepper and mix well.
Combine and add broth. Add the veggie mixture to bread cube mixture and toss to combine. Drizzle 1 ½ cups of the chicken broth over mixture in bowl, and stir to combine. Add more chicken broth and salt and pepper as desired.
Bake until golden. Place stuffing in prepared pan and bake, uncovered, until top is lightly browned, about 50-60 minutes.
Notes
I usually cook the stuffing in my bird. If you do the same, make the mix a bit drier (minus ½ cup or so of the chicken broth) since the juice from the turkey will soak into the stuffing as it cooks.Be sure your stuffing reaches an internal temperature of 165ºF if cooked in the bird. If your bird is done and your stuffing is not, transfer to a baking dish and continue to bake until it hits 165ºF to destroy all food-borne bacteria. To freeze and reheat: Let it cool completely before storing it in freezer-safe bags or Tupperware containers. You can reheat the stuffing from frozen for about 30 minutes (covered) in a 350ºF oven. Remove the foil in the last 5 to 10 minutes of baking to help the top crisp up again.
