Ingredients
1 5-ouncecan albacore tuna in water or oil, drained well
1cupwhite beans, if using canned, rinse well and drain
½cupextra virgin olive oil
1clovegarlic, minced
Zest of 1 lemon
2tablespoonsfresh lemon juice
2tablespoonsthinly sliced red onion
2tablespoonsminced fresh rosemary
½teaspoonkosher salt
½teaspoonfreshly ground black pepper
4slicessourdough bread
Instructions
Drain the tuna well. In a medium bowl, combine the chunk white tuna with the beans, olive oil, garlic, lemon zest, lemon juice, red onion, rosemary, salt and pepper. Mix well and let sit for 10 minutes up to overnight for flavors to meld.
Toast the sourdough toasts until golden brown and divide the tuna among the toasts. Add more salt and pepper to taste.
