8cupsarugula
3cupsseedless watermelon, portioned with a melon baller or chopped into ½ inch pieces
3cupsstrawberries, sliced
¼red onion, thinly sliced
½cupfresh basil, chiffonade (optional)
½cupcrumbled feta cheese or more to taste
¼cup sliced almonds
⅓cupfruity extra virgin olive oil
1 ½tablespoonsbalsamic vinegar
1teaspoon sugar or honey, plus more to taste
¼teaspooneach kosher salt and freshly ground pepper
Instructions
In a large bowl, add the arugula, watermelon, strawberries, red onion, basil, feta cheese, and almonds.
in a small bowl whisk the olive oil, balsamic vinegar, sugar or honey, and salt and pepper. Taste for sweetness and add more honey or sugar to your taste. Drizzle half of the dressing over the salad ingredients, reserving the rest and adding more if desired, then gently toss. Taste for seasoning and serve.
