Cranberry Nut Bread

Delicious holiday treat with fruit and nuts.

Ingredients

  • 2 cups all purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons backing powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons shortening
  • 1 egg beaten
  • 1 1/2 cups fresh or fresh frozen cranberries coarsely chopped
  • 1/2 cup pecans or walnuts chopped

Instructions

  1. Preheat over to 350 degrees. In a large bowl, with a wooden spoon mix together flour, sugar, baking powder, salt and baking soda.
  2. Stir in orange juice, orange zest, shortening and egg and mix until well blended.
  3. Stir in cranberries and nuts.
  4. Pour batter into 2 greased mini loaf pans or one 9 X 5 inch loaf pan.
  5. Bake for 40 minutes if making small loaves, 55 minutes for a large loaf or until a toothpick comes out clean. Remove from pan and cool.
