This week’s meal plan includes: Chicken piccata, blackened fish tacos, chicken gyros, homemade hamburger helper, Greek chicken gyro salad, mix and match sides, and lemon loaf for dessert.
To simplify your grocery shopping list:
- Chicken breasts used for chicken piccata and the Greek marinated chicken used in the gyros and salad.
- Tzatziki and feta used for gyros and salad.
- Use your favorite veggies for cheeseburger helper, gyros, Greek salad and side salad.
- Lemons used for Greek chicken marinade, chicken piccata, and lemon loaf.

Meal Prep & Leftover Tips

Chicken Piccata: Serve with parmesan noodles, garlic bread, or your favorite veggie or side salad. Prep and freeze extra garlic bread to serve with cheeseburger helper and Greek salad.

Blackened Fish Tacos: These tacos are a balanced meal on their own, protein-fueled but with a touch of carbs for balance. But you can also serve with a side of beans and rice, or chips and salsa.

Chicken Gyros: Prep extra tzatzki and Greek chicken marinade, or grill extra chicken, for Greek salads on Friday night. Serve with Greek salad with avocado and/or killer garlic fries!

Homemade Hamburger Helper: Try swapping the ground beef for ground turkey, or ground pork. Add in any of your favorite veggies. Serve with garlic bread, side salad, or premade salad kit.
