Friday Faves and a Burger Bash

Recipe > Black and Blue Cheese Burger

Burger bashes are one of the easiest and best reasons to gather a few friends or family for an impromptu summer gig. Heat up the grill, spread out some yummy condiments and you’re in business.

I was recently asked to contribute to the burger madness with an entertaining article at Eat Wisconsin Cheese and share a few of my favorite burger craving recipes. Really? You want me to create recipes that are meaty, juicy and feature CHEESE? Sounds like a regular summer weekend at casa de Larsen.

Bacon Cheddar Chicken Burgers with Guacamole and BBQ Mayo + a Grilling Package Giveaway

I try my best when it comes to cooking and baking from scratch for my family and friends. But sometimes, the time it takes to cook from scratch takes a back seat to having fun in the sun. Today I have a great recipe and $100 Grilling Giveaway at the end of this post that’ll help you balance the two.

Grilled-Chicken-Burgers-foodiecrush.com-016

My dad taught me something early in life. You always want to have back-ups. Whether it’s extra rolls of toilet paper, another pair of your favorite flip-flops, or having enough pickle relish on hand to feed the Spanish marines (one of my mom’s favorite sayings), you gotta have extras for those times in need.

That’s why my freezer is my friend. Frozen veggies, frozen shrimp and of course, ice cream. They’re all at the ready when in need in the kitchen. Recently, I’ve added a new freezer back-up that’s become a summer staple. Gold’n Plump Chicken Patties.Grilled-Chicken-Burgers-foodiecrush.com-005

The Best Garlic Burgers EVER

These juicy, world famous garlic burgers have just three seasonings and a legion of fans, and are simply one of the very best burgers you’ll every bite into.

The Best Garlic Burgers Ever | #recipes #onthegrill #beef foodiecrush.com

It’s here! Grilling season is dead set upon us and that’s just one reason I’m happy to partner on this post with Cowboy Charcoal, because just like this recipe, Cowboy Charcoal is a classic.

And this garlic burger recipe is one of my all-time, forever favorites, and the favorite of thousands upon thousands who’ve eaten it for themselves. Not cooked by me, but by one of the most classic joints in Salt Lake City, the spot that has held the title of Best Garlic Burger in Utah.

Until now.

The first time I had this burger was on a date with my then boyfriend, now husband, at Salt Lake City’s notorious The Cotton Bottom Inn. Resting at the base of two ski canyons, this dive bar is THE spot in the city to stop in for a beer and a round of pool or two after skiing one of the Cottonwood Canyons in the winter or to soak up the sun out on the patio after hiking in the spring, summer and fall.

I don’t know if anyone actually comes for the beer, and I highly doubt it’s for the ambiance. No. It’s the garlic burgers they’re known for. They’re legendary. In fact, I don’t think I’ve EVER seen ANYONE order anything else.

And like the success of all legends, their recipe is top secret. But. I’ve cracked the code, and this is it.

January is all about making easy swaps in the kitchen to prepare dinners that are a bit more healthful—but still cure your cravings.

I mean, I love, love, love a great quinoa salad, and I’m totally down with eating my favorite egg white fritatta nearly every day of the week. And a 10-minute salmon dinner? There’s absolutely nothing wrong with that.

But when the burger cravings strike during my New Year-mindful-mode, and I’m somehow able to harness the willpower not to make my favorite garlic burgers, I turn to this burger recipe instead.

This post is brought to you by McCormick

It feels like no matter what sort of dinner party/potluck/get together I go to these days, there’s always at least one or two picky eaters in the group who the cook should consider. Gluten-free. Dairy-free. Lactose intolerant. Low-carb. High-carb. Vegetarian. Pescatarian. I-don’t-like-it-atarian.

Don’t get me wrong, I totally get it. Dietary restrictions are always hardest on the one who has to do the restricting. But sheesh, when the intention starts with, “We haven’t seen you forever! Come on over and we’ll throw some burgers on the grill” only to spiral into a criss-crossed recipe of spin-art, somewhere along the line we just have to simple it up.

My solution? Give the people what they want by sticking with one adaptable theme.

Today, thanks to the bounty of info featured in McCormick’s Flavor Forecast: 2017 Grilling Edition, where experienced and novice grillers find tips to up their grilling game, we’re taking Korean burgers and specializing them for every eater’s requested protein. continue to the recipe… about Korean BBQ Burgers 3 Ways with Spicy Asian Slaw

Chicken Sliders with Pasilla Peppers and Chipotle Ketchup

Ground Chicken Burger Sliders with Pasilla Peppers and Chipotle KetchupI’m like my mom this way. I love a good burger.

On our summer trips to visit my Grandma in San Francisco, my dad would make a huge bed in the back of the Suburban and my sister and I would travel the 600 miles there and 600 miles back sprawled out in the lap of luxury on a 6 inch styrofoam bed, surrounded by magic markers, books and games.

Our road trips were pre-seatbelts, pre-DVD, pre-books on tape and even pre-VHS or Sony Walkman. Raise your hand if you’re wondering what those are. Oh my, oh my, oh my..continue to the recipe… about Chicken Sliders with Pasilla Peppers and Chipotle Ketchup

This year I’m happy to share recipes created as a Kroger blogging ambassador, where I am featuring all sorts of products from Kroger grocery stores for my family, and for yours, including this amazingly simple, totally delicious, Bison Burger.

Okay. I know what you’re thinking. “Bison? I’ve never tried bison.” “Isn’t bison game-ey tasting?” “But how can I eat a buffalo?” “It sounds way too exotic for me.”

Over the years I may have had some of the same thoughts. But in recent years I’ve discovered that using grass-fed bison for grilling burgers is a GREAT idea.

Chicken and Waffles Sliders Plus 4 Spicy Dipping Sauces | foodiecrush.com

Chicken and Waffles Sliders

An overnight brine of buttermilk and Cholula® Hot Sauce gives a juicy kick to these chicken and waffle slider sandwiches.
Chicken and Waffles Sliders Plus 4 Spicy Dipping Sauces | foodiecrush.com #recipe #southern #sliders #appetizer #sauce
I’m pleased as punch to bring you this recipe sponsored by Cholula® Hot Sauce, because at our house, Cholula hot sauce is probably our most used condiment in the cupboard.

It’s a Southern thing. But it’s taking over mainstream. Chicken and waffles.

The best fried chicken I’ve ever had was from Gus’s Fried Chicken in Memphis, TN. I shared it with my friend Laura straight out of the paper bag on an old picnic table at The Shacks. She’d ordered it for us hot and spicy. Just the way I pretty much like everything.

Then last year, I took the whole dang family back to the South where we hit up more than one fried chicken joint and really went for the gusto with chicken and waffles at Hattie B’s—served only on Sunday.

These two meals are what food memories are made of.

Then we came home. My man couldn’t get that chicken and waffles breakfast out of his head. And ever since he’s been working on perfecting his version.

And today friends, this recipe is it.

My word for 2015 is constantly ringing in my ears. “Enough. Enough. Enough.”

Now if I would just listen to it I’d be head and shoulders in front of the game instead of doing double duty trying to catch up.

But when I’m ignoring my conscience and going along my route path, I have a constant reminder to put my word “Enough” into action. Friday Faves Firecracker Style

Snap, Crackle, POP! and a Happy 4th of July!

This weekend I’m heading to the hills for our annual quest to see just how much recipe creating we can do in between kayaking lake time, cabin nap time and deck drinking time. It’s a tradition that’s much needed since I’ve realized that in 2 more weeks, summer for me will be half over. Major sad face.

The next few weeks are going to fly by with as I hit my old stomping grounds and some brand new frontier. You’ll be seeing my adventures on Instagram, so follow along and let’s see where we go.

But enough about what’s down the road, let’s look at what’s right in front of us and set the weekend on fire with a few Friday Faves.

Daddy's Hamburgers foodiecrush.com

Daddy’s Baked Hamburgers and Friday Faves

Yep, you read that right! These baked hamburgers are a breeze to make and come together in about 15 minutes. You’ll definitely want seconds!

sheet pan of baked hamburgers

Hamburgers in the Oven

With The Super Bowl blowing up television screens and beer kegs nationwide, there will be plenty of eyeballs glued to the screen. Will they be watching the game? Shhushing fellow T.V. watchers during the commercials? Or anxiously awaiting to judge the lip syncing skills of Beyonce? You go girl.

Sure that’s all part of the fun, but for wayyyyy more of us it’s all about the food. Americana at its gluttonous best with antacids and Ibuprofen on stand-by, ready to remedy too much revelry when the San Francisco 49ers come home with the ring. That’s right. My team is coming home with the big V.

The recipe for Daddy’s Hamburgers is an homage to the 49ers in a way. My grandparents immigrated to San Francisco, the only place they lived besides communist Germany, and it’s where my dad was born and raised until he came to Utah to play college basketball and, much to my mom’s distress, stayed because of the great hunting in Utah and Idaho. SF is in my family’s blood, it’s one of my favorite cities, and the niners were always a special connection with my dad, the ultimate T.V. sports fan.

Watching 49er games with D was a ritual, not in a weird get dressed in a jersey way—which my husband has done for each game this season—but in a let’s get behind this team and show we care way. Somehow I married a niner’s fan, it was where we took our first trip together, and it’s now Smudge’s favorite team too. What a surprise, she’s such a daddy’s girl.

These baked burgers are my dad’s specialty, one that when I called him to get the recipe, he had made just the night before! When my dad cooks, he is very precise, making even cuts of cheese squares to top basic hamburgers with french rolls or ciabatta. We still call them hamburgers even though they’re topped with cheese, because that’s how my dad has always done it.

It all looks way too simple to taste as delicious as it does. The secret is the pat of butter atop each oven baked hamburger that melt down into the burger meat co-mingling with Worcestershire sauce to create a juicy, lickable drip down each side of your cheering for the 49er’s game face. (Please win. Please win.)continue to the recipe… about Daddy’s Baked Hamburgers and Friday Faves

As a kid, my dad wasn’t much of a griller. He was more of the nacho-making guy. Woman-ing the grill was more my mom’s expertise, and let me tell you, she had her burger game down.

Now, as an adult, with not just one, but two grills ready to be fired up at a moment’s notice, my husband and I share the man/woman-ing of the grill. When it’s his turn, you’re likely to see this ribeye steak action happen in all the best grilling ways. When it’s my turn, you’ll usually see me trying out new things like grilled cauliflower steaks, you know, for those times calling for a bit lighter flare.

But where we always meet in the middle is when it comes to grilling burgers, and when it comes to burgers we absolutely do not discriminate. Bison. Turkey. Chicken. You name it, if we can shape it into a patty, we’ll grill it.continue to the recipe… about Bacon Double Cheddar Cheeseburger with Caramelized Onions

Easy Cheeseburger Soup Recipe

Disclosure before we even get started: NO! I am not pregnant. But I know who is and this post is for her.

Pregnancy brings with it lots of cravings. Weird cravings that run all across the bun-in-the-oven-baking map as noted on this amusing weird pregnancy craving list. And as nearly everyone on God’s green earth knows, at the top of that list is pickles. Pickles, that in a weird, roundabout way, was the craving that fueled my fire to create this recipe for the nearly-mom-to-be.

This recipe is part of a virtual baby shower for food blogger Jessica of How Sweet It Is, because as things go in bloggerland, we can’t always be with our bloggity pals in person to party hearty, but we do enjoy toasting to their victories and accomplishments. And there’s not much bigger accomplishment than becoming a parent.

Do I hear an, “Amen sistah!” or more appropriately, “Amen, Mama!”

So for Jessica’s soon-to-be-delivered bundle of joy, a group of bloggers are celebrating the way we do, by creating recipes for stuffing our faces. But today’s theme for Jessica’s baby shower isn’t your normal, everyday will it be blue or pink kind of shower.

No, this shower is in the theme that is frequently shared on Jessica’s blog, in the name of getting “all-trashed up” where she takes the everyday recipe and really throws it for a loop to create something special. And usually adorned with neon or sprinkles.

Friday Faves Halloween

Happy Halloween friends of fright!

I hope you’ll be enjoying the day in the style it so deserves by oohing and ahhing at all of the cute little Elsa’s that scamper up to your door, scaring the crap out of the teenagers with 5 o’clock shadows in hopes of convincing them this should be their final trick or treat voyage, and relishing the smell of burning pumpkins as their candle light flickers come to an end.

I’ll be donning the wig up above as part of my Halloween outfit. What that is, I haven’t quite figured out yet. I just hope I don’t end up looking like my model come Saturday morning. Remember friends, it’s about moderation in all areas on Halloween. And can someone pass skeletor above an ultra rich deep conditioning treatment, PLEASE?

Have a great Friday and let’s get to this week’s Friday Faves…

25 Crazy Fair Foods to Make at Home 150

Fair for All: 25 Crazy Fair Foods You Can Make at Home

25 Crazy Fair Foods to Make at Home 150

The weather’s getting cooler (let’s hope it stays that way), the kids are back in school (thank God!), and carnivals and state fairs have been in full swing where crazy food is the main attraction.

Where else can one make a meal of those giant medieval turkey legs that bring out the caveman in us,  a side of deep-fried Oreos, and a caramel apple (because, balance?).

Some of us love the fair just for the food—particularly the melt-in-your-mouth, deep fried doughy goodness kind. Gimme all the funnel cakes!

That’s my go-to—the funnel cake, though we called them elephant ears, which is cute and also disturbing if elephants are your favorite animal. Doused, not dusted with a generous white cloud of powdered sugar, the doughy concoction with the upturned crispy edges never failed to put a smile on my face, or sate my wicked sweet tooth.

A Taste and Tell Fair for All

Last harvest season we followed one of our favorite food bloggers, Deb from Taste and Tell, around the Utah State Fair where she and her family romped with rubber duckies, got cotton candy stuck in their hair and enjoyed some good old fashioned fair food.

Afterward, Deb shared her favorite recipes for fair food in the summer issue of FoodieCrush magazine. And that inspired us to hunt around for even more crazy fair foods from food bloggers across the web.

3-Day Weekend Summer Recipe Ideas | foodiecrush.com

Memorial Day Recipe Ideas: Here’s What I’m Cooking

Celebrate the beginning of summer and Memorial Day weekend with a few favorite recipes made especially delicious when shared with friends and family.

Hello and happy Saturday!

3-day weekends bring on all of the desires of wanderlust, relaxation, and deciding what’s on the menu.

I was on a phone call with a client yesterday. After talking shop I couldn’t wrap things up before asking the most pressing question of our whole conversation: What are you cooking for Memorial Day?

His answer was unexpected of sorts, and a reminder of why we’ve come to celebrate this 3-day weekend with food. “Meat. Lots of meat.” He was joining his wife’s family at his father-in-law’s home where every year for Memorial Day they celebrate the life of her brother who was killed in action. He explained more, “My father-in-law spends days preparing and grilling so much meat for 40-50 people. I don’t know how he does it every year, but it’s important to him that he does.”

Memorial Day is a special holiday where we shouldn’t forget the real reason it was established: to honor our fallen patriots. And like so many traditions, it’s food that brings us together to do so. And so with a very grateful heart and a full stomach, we salute you and the families who’ve loved and lost.

One Pot Sloppy Joes | foodiecrush.com #hamburger #sloppy #joes #sandwich

How to Make Homemade Sloppy Joes

Forget the cans of Manwich sloppy joe sauce, because my mom’s homemade sloppy joes recipe is just as easy to make and sixty-four (or more) times as good, especially knowing there’s a generous helping of vegetables inside this homemade, ground hamburger-ed, comfort food, beef-ey sandwich.
One Pot Homemade Sloppy Joes | foodiecrush.com #hamburger #sloppy #joes #sandwich

Remember the days when licking your plate was encouraged? They still are. And your fingers, and your chin too.

I originally published this recipe in the earlier days of le FoodieCrush blog, and after making it time and time again, I felt it was time for a little refresh. It’s totally worthy.

One of my favorite dinners as a kid was always Sloppy Joes, and the memories of stealing tastes of this burger/veggie mixture as it simmered on the stove still renders the same take-a-bite-then-burn-the-top-of-my-mouth-oh-no-it’s-now-become-a-blister result today as I hear the subliminal retort of my mom echo in my adult ear to “leave it alone or there’ll be nothing left for the rest of us to eat.”

Guilty as charged. But, sorry mom, I still can’t help myself. And if you’re a fan of easy recipes and you make this one, my mom will tell you it’s okay that you taste-test your way through the making of it, too.

And I’m here to attest, the top-of-the-mouth-blisters are totally worth it.continue to the recipe… about How to Make Homemade Sloppy Joes

Quinoa and Cauliflower Chowder foodiecrush.com

Gluten-Free Quinoa and Cauliflower Chowder

Do you have your megaphone ready? I’m digging my husband’s out of the garage.

Quinoa and Cauliflower Chowder foodiecrush.com

Yep, he has a megaphone because he’s in a band, you know, for “special effects” and stuff. He also has these weirdo 1960’s goggles and a suit covered in Christmas lights—because he’s in a band.

But that’s another story for another day.

Today’s story is that we’re all banding together and shouting at the top of our lungs—or into said megaphone if you have one handy—we’re shouting, “GOODBYE FROZEN TUNDRA, and good riddance.” Why? Because (happy dance) this week marks the official first day of spring. Yes!

But that certainly doesn’t signal the end of eating savory soups and stews. Heck, this is just the beginning.

And since we’ll probably do the winter/spring dance tease of warm one day, cold the next and I’m sure I’ll have to cover my tomatoes for at least two more snow storms, this gluten-free chowder is just one way to walk the tightrope of comfort food cravings and spring clean eats desires.

Quinoa and Cauliflower Chowder foodiecrush.com

Last week I may have said I wasn’t a devout whole foodie. And now, here I am, posting whole foods. To me, that is exactly how a foodie should be. Balanced. Eating what feels right. What cures the craving.

Lightened up, but still savory, this chowder is a great #MeatlessMonday meal. Because that’s what I’m craving now.

  • ’Tis the season for saving time by holiday gift + grocery shopping to check it all off your list at once. #ad I paired my annual batch of homemade Irish cream with all the makings for a Christmas/New Years morning coffee in bed basket with items I found while grocery shopping at @krogerco @mysmithsgrocery . Whipping up gift baskets with a personal touch makes present giving way less stressful for you and extra special for them. Get the recipe for my homemade Irish cream with the link in my profile and search “Irish cream” then head to @krogerco to make your own gift to give. #krogercollective
  • Why go same-same when you could go ho-ho-holiday and create a festive and creative Christmas themed appetizer?!? I made this antipasto Christmas wreath for a holiday party 4 years ago and was reminded of it when I saw @delallofoods Antipasti Holiday Wreath contest where (3) lucky winners will receive $200 worth of DeLallo product. Since I partner with them on recipes here and on the blog I prob can't win but still tagging @delallofoods #DeLalloEats & #contest just in case I can! Contest ends Dec. 17 so be like me and go back to the Xmas time machine or make a new antipasto wreath for your weekend party and enter too. More info at @delallofoods #ad
  • Here's the easiest way to add a twist to serving salad + antipasti to your party people—give it to them served up on a platter. Half appetizer, half first course, it's one complete dish where everyone can dig in and fend for that last artichoke heart or blue cheese stuffed olive for themselves. Link in bio, just search "antipasto".
  • Literally punch drunk in love. Bubbly champagne, pom juice, OJ and a Grand Marnier floater with holiday flave DIY frozen ice cubes met and married to become the party favorite. Can I get a yes I'll have another, please fill up my cup? And for all the non-boozey party people, it can easily be made non-alcoholic too. • It’s a proven fact that everyone at the party loves a cheese board. It’s the centerpiece of nibbles and bites and small talk to break the party ice. But when you add a little heat to make a bubbly, oozey brie cheese dip, the party vibe definitely ratchets up a notch. This one's topped with cranberries, pecans, fig jam and thyme and IT'S SO DANG EASY! Recipe link in my profile https://www.foodiecrush.com/easy-baked-brie-recipe/

  • This chicken cacciatore is literally fall off the bone tender. It's a humble chicken in an amazing sauce from @skinnytaste ‘s Fast & Slow cookbook that somehow doesn't call for any special ingredients to get it's amazing taste. And since t's cooked in the slow cooker, you can prep it then pop it in the cooker and go about your day, or make and serve for Christmas Eve.
